Cooking Instructions
Prepare the Lentils: Rinse and cook toor dal (yellow split pigeon peas) until tender. Set it aside.
Cook the Vegetables: In a large pot, heat some oil and add chopped onions, tomatoes, and your choice of vegetables (such as carrots, drumsticks, and okra). Sauté until the vegetables are partially cooked.
Add the Masala: Add Smoky Mountain Sambar Masala to the pot and stir well. Add tamarind extract and cook for a few minutes.
Combine and Simmer: Add the cooked lentils to the pot and mix well. Add water to reach the desired consistency and bring the mixture to a boil. Let it simmer for 10-15 minutes, allowing the flavors to meld together.
Temper and Serve: In a small pan, heat some oil and add mustard seeds, curry leaves, and dried red chilies. Pour this tempering over the Sambar and serve hot with rice, idli, or dosa.
