Cooking Instructions
Prepare the Rice: Soak basmati rice for at least 30 minutes. Cook the rice until it's 70% done and set aside.
Marinate the Protein: Marinate chicken, mutton, or vegetables with yogurt and Smoky Mountain Biryani Masala. Let it sit for at least an hour to absorb the flavors.
Cook the Base: In a large pot, heat some oil and add chopped onions. Sauté until golden brown, then add ginger-garlic paste and cook for another minute.
Layering the Biryani: Add the marinated ingredients to the pot and cook until they are browned. Add tomatoes and cook until the mixture is well blended. Layer the partially cooked rice over the top and add saffron milk, ghee, and fried onions.
Dum Cooking: Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes, allowing the flavors to meld together and the rice to fully cook.
Serve: Garnish with fresh coriander and mint leaves and serve hot with raita or salad.
